What is cavier?

Caviar is a delicacy consisting of salt-cured fish eggs, typically from sturgeon fish. The most prized and expensive caviar comes from the Beluga, Ossetra, and Sevruga varieties of sturgeon, which are found in the Caspian and Black Seas.

Caviar is often served as an appetizer or garnish, typically on crackers or toast points. Its taste is often described as rich, buttery, and briny, with a smooth and creamy texture.

Caviar is considered a luxury food item and can be quite expensive, with prices ranging from several hundred to several thousand dollars per ounce. Due to overfishing and habitat destruction, many sturgeon species are now endangered, leading to conservation efforts and regulations on caviar production and trade.
