Shallots, or eschalots, are a type of onion that are smaller and sweeter than regular onions. They have a brown papery skin and a white to pale purple flesh. Shallots are commonly used in French cuisine and have a milder flavor than onions. They can be eaten raw or cooked and are usually sliced thinly. Shallots are a good source of vitamins and minerals, including vitamin C, potassium, and iron. They also contain antioxidants and may have some health benefits, such as lowering cholesterol and reducing the risk of cancer.
