What is mockduck?

Mock duck is a vegetarian meat substitute commonly used in Chinese cuisine, particularly in Buddhist cuisine. It is made from wheat gluten and can be shaped and flavoured to mimic the texture and taste of duck meat.

To make mock duck, wheat gluten is mixed with water and other ingredients to form a dough. The dough is then shaped and steamed or baked to create a meat-like texture. It can be seasoned with soy sauce, ginger, garlic, five spice powder, and other spices to add flavour.

Mock duck is typically used in stir-fries, soups, and stews, and can be added to dishes like moo shu vegetables and Peking duck.

While mock duck is a vegetarian option, it is not always vegan as some brands may contain egg or dairy ingredients. It is also a good source of protein and can be a healthy alternative to meat.
