What is muke?

Muke

Muke is a type of noodle, popular in Turkish cuisine, particularly in the Black Sea region. It is known for its unique preparation method.

Essentially, muke is made from a simple dough of flour, water, and salt. This dough is then rolled out very thinly, and cut into small, irregular pieces or squares. The preparation method is different from traditional noodles due to how the small irregular pieces of the rolled out dough are turned into muke. Each piece of dough is then individually twisted or pinched, giving it a distinctive, slightly curled shape.

Muke is often cooked in a broth or soup, sometimes with beans, vegetables, or meat.
