What is nigari?

Nigari, also known as magnesium chloride, is a coagulant used in the production of tofu. It is often derived from seawater and is rich in minerals such as magnesium and chloride. Nigari helps to separate the curds from the whey in soy milk, creating the solid tofu that is pressed into blocks. It is known for its ability to yield a firmer and smoother texture in tofu compared to other coagulants. In addition to tofu production, nigari is also used in various food and beverage applications, as well as in the production of bath salts and skincare products.
