What is pallubasa?

Pallubasa is a traditional spicy soup from the city of Makassar in South Sulawesi, Indonesia. The main ingredients of pallubasa are beef, offal (such as lungs, liver, and tripe), and bone marrow cooked in a broth made of onions, garlic, turmeric, lemongrass, and other spices. The dish is typically served with rice cakes (ketupat) and sambal, a spicy condiment made from chili peppers and garlic. Some varieties of pallubasa also include shredded coconut, which adds a sweet and nutty flavor to the soup. Pallubasa is considered a comfort food and is often eaten for breakfast, but it can also be enjoyed as a hearty meal any time of the day. Its popularity has spread beyond Makassar and can now be found in many Indonesian cities and restaurants.
