What is palmitos?

Palmitos, also known as heart of palm, is a delicacy derived from the inner core of specific varieties of palm trees. It has a delicate flavor reminiscent of artichokes and asparagus and a tender, slightly crunchy texture. Palmitos are commonly used in salads and appetizers or sauteed as a side dish. They also serve as a low-calorie alternative to traditional starches like potatoes and rice. However, as palmitos come from Palm trees, harvesting them can be environmentally damaging, particularly the destruction of natural habitats. As a result, sustainable harvesting is strongly advocated.
