Stampot is a traditional Dutch dish made from mashed potatoes mixed with vegetables and meat. The most common stampot is made with kale (boerenkool), but it can also be made with carrots (peen en uien), sauerkraut (zuurkool), endive (andijvie), and spinach (spinazie).
The dish is usually served with a smoked sausage (rookworst) on top, and sometimes with bacon bits (spekjes) and gravy. It is a hearty and filling meal that is especially popular during the colder months.
Stampot originated as a peasant dish, as it was a way to use up leftovers in a single meal. Today, it is still a popular comfort food in the Netherlands, and is often enjoyed with a glass of beer or wine.
