What is tokajer?

Tokaji or Tokajer is a sweet white wine produced in the Tokaj region of Hungary. It is made from grapes that are affected by a fungus called botrytis cinerea, which concentrates the sugars and gives the wine its characteristic rich, syrupy flavor. Tokaji is classified according to its sweetness level, with the most common varieties being szamorodni, aszú, and eszencia.
