What is toket?

Toket, also known as Tokat kebabı, is a regional dish originating from Tokat, Turkey. It's a type of kebab unique in its preparation and presentation.

The kebab is traditionally cooked in a horizontal wood-fired oven called a tandır. The main ingredients include lamb, eggplant, potatoes, tomatoes, green peppers, and garlic, all layered on skewers.

The layers are placed on the skewers in a specific order to ensure even cooking and flavor distribution. The fat from the lamb bastes the other vegetables as it cooks.

The key to authentic Toket kebabı is the tandır oven and the quality of the lamb. The wood fire gives the kebab a distinct smoky flavor.

Once cooked, the skewers are removed from the oven, and the ingredients are typically served on a large platter of lavaş bread, which soaks up the delicious juices. It's usually enjoyed hot, right out of the oven.

The dish is a source of pride for the people of Tokat, and it is a popular offering in restaurants throughout the region. Because of its unique flavor, it is recognized in Turkish cuisine.
