What is saltiado?

Soltiado refers to a traditional dish from Peru and Bolivia, typically made with either beef or chicken simmered with onions, tomatoes, spices, and often served over rice or potatoes. The dish is hearty, flavorful, and commonly prepared in large batches for special occasions or family gatherings. Some variations of soltiado may include additional ingredients such as bell peppers, garlic, or cilantro. The name of the dish is thought to derive from the Spanish word saltear, which means "to jump" or "to sauté."
