What is budu?

Budu is a traditional fish sauce that originated in Malaysia and is commonly used in Malaysian and Indonesian cuisine. It is made from a blend of salted anchovies, fermented for several months, and then mixed with various ingredients such as chili peppers, onions, and tamarind. The resulting sauce is a darker, more pungent version of fish sauce, with a distinctive aroma and flavor. Budu is often used as a dipping sauce for grilled meats and seafood, and as a seasoning in soups, stews, and curries.
