What is kokoretsi?

Kokoretsi is a popular Greek dish made from a mixture of seasoned lamb or goat offal, such as heart, lungs, liver, and intestines, wrapped in layers of seasoned intestines and roasted on a spit. It is a traditional dish consumed in Greece, Cyprus, and other parts of the Balkans during special occasions and celebrations, such as Easter.

The offal is typically marinated in a mixture of olive oil, lemon juice, garlic, and various herbs and spices before being wrapped in the intestines. The whole concoction is then roasted slowly over an open flame, resulting in a crispy, flavorful dish.

Kokoretsi is often served as a street food snack or as part of a larger meal, accompanied by side dishes such as roasted potatoes, tzatziki, and Greek salad. It is a beloved dish in Greek cuisine, known for its rich and intense flavor profile.
