What is auxerois?

Auxerrois is a white wine grape variety that is widely cultivated in the Alsace region of France, along with Luxembourg and Germany. It is also an authorized variety in the production of the still and sparkling wines of Champagne. Auxerrois wines are typically dry, fruity, and full-bodied, with a yellow-green or golden color. They are known for their subtle and delicate aromas of white flowers, citrus fruits, grapefruit, and apple. The wine is often blended with other white grape varieties such as Chardonnay and Pinot Blanc to add complexity to the flavor. It has a moderate alcohol content and is best served chilled.
